TONZU Tofu Noodle Casserole

Smooth and creamy with flavours and texture, our TONZU Tofu Noodle casserole is a hearty winter meal – Also great cold the next day served with toast! Replacing a traditional meat ingredient with TONZU Tofu gives you a lighter, healthier option.



  • 450g TONZU Tofu, mashed
  • 2 cups pasta spirals
  • ½ cup fresh chopped parsley
  • ½ cup onion, chopped
  • 1 clove garlic
  • 4 carrots, diced
  • 1 stalk celery, diced
  • 225g mushrooms (optional)
  • 1 cup grated cheese (cheddar)
  • 3 tablespoons butter or margarine
  • 4 tablespoons flour
  • 1 tablespoon miso or ½ tspn salt
  • 1 cup water or stock
  • 1 cup milk, soy or dairy
  • 1 cup seasoned breadcrumbs


  • Cook pasta spirals in boiling salted water and set aside to cool.
  • Saute vegetables and TONZU Tofu in a little oil until onion is golden and tofu browns slightly (sprinkle in a little tamari during last minute or two of cooking for a little extra flavour).
  • Mix into noodles.
  • Pour half of mixture into casserole, cover with ½ the grated cheese and repeat layers.
  • Melt butter over medium heat, stir in miso and flour and toast for a few minutes.
  • Add milk and stock, cook at medium heat until mixture thickens and bubbles.
  • Pour over casserole, top with bread crumbs, dot with butter.
  • Bake 350 degrees F/ 175 C for 30minutes

How to Serve

  • Serve hot out of the oven with fresh vegetables.
