TONZU Tofu Curried Vegetables

Make this easy TONZU Tofu curried vegetable dish for a quick and tasty dinner. The vegetables are simply a suggestion as you can substitute just about any vegetables. Serve with steamed rice or another whole grain, and a side dish of TONZU Soy Yoghurt Tsatziki as a compliment.



  • 275g TONZU Tofu cubed
  • 4 tablespoons oil
  • 1 clove of garlic, minced
  • A few dashes of curry powder (more to taste)
  • 1 bunch broccoli, chopped
  • 2 large carrots, sliced thinly on the diagonal
  • 1 onion, sliced thinly
  • 2 tomatoes, chopped
  • Salt to taste


  • Heat the oil in a large wok or frying pan.
  • When the oil is hot, but not smoky, add the minced garlic. Saute for a minute.
  • Remove the garlic, and add a few dashes of curry powder and the tofu cubes. Saute the cubes, stirring frequently, for about 3 minutes or until firm and rubbery and remove and set aside.
  • Add the vegetables one at a time.
  • First add the broccoli and saute for about 2 minutes; then add the carrots and onion. Continue stirring and tossing over low heat.
  • When the carrots are tender and the onions appear translucent – after approx. 3 minutes – add the tomatoes to heat through, about 2 more minutes.
  • Combine tofu back in and salt and pepper to taste.
